Diet, Antioxidants and Disease
Professor Barry J Parsons

 

Professor Barry Parson’s delivered his inaugural lecture entitled, ‘Diet, Antioxidants and Disease’ to friends, colleagues and partners of the university. In his lecture, Barry described how an early research career in radiation biochemistry, a subject outside the major areas of scientific research, has led to his current involvement in the highly topical research area of the roles of reactive oxidative species in biology and medicine. He outlined how key developments in this field have produced the current worldwide interest in understanding how dietary antioxidants may prevent some of the major diseases prevalent in society today. Aided by the development of fast reaction measurement techniques such as pulse radiolysis, Barry demonstrated how free radicals and other reactive oxidative species initiate or promote a wide range of diseases. He will also showed how antioxidants, including those from our diet, are essential requirements for a healthy life.
