The Food Research Group at Leeds Metropolitan University is the leading technical support facility for the region's food and drink sector. Over 100 companies have been assisted during the last five years with grant aid awarded from Yorkshire Forward, Government Office for Yorkshire and Humberside and the Food Processing Faraday Fund. With know how and expertise in ingredient application technology, the group specialises in recipe and product development to meet manufacturers' needs.

The Leeds based holding company for the award winning Casa Mia restaurants are developing a range of premium branded Italian sweets for the food service and retail market. The Food Research Group, with grant funding from the Food Processing Faraday, have developed a  range of clean label luxury ice creams, using innovative functional ingredients and  a knowledge of fat /protein emulsions, followed by assistance to scale up for manufacture.

The expertise offered by Dr Tony Parsons and his team allowed Dolce Italia the opportunity to develop their Quality Management Systems and supporting verification which were needed to grow the business and maintain food safety during the development of the product range.

The products have been successfully launched under the Casa Mia brand.
